Have you ever cooked or eaten something so good you literally CANNOT stop thinking about it? Well, it's this salad for me! This super simple recipe came together with things I already had in my fridge and pantry.. you know, we're getting kind of creative during this quarantine! Let's dive into it!
Spinach Salad with Strawberries, Candied Walnuts + Honey-Lemon Dressing
First let's break all the ingredients down:
- baby spinach
- hulled and halved strawberries
- crumbled goat cheese or parmesan cheese optional but I highly recommend either!
(this recipe was double this, but I only had a cup of walnuts on hand so I halved it, feel free to double this if needed! Was the perfect amount for 2-3 salads)
- 2 Tablespoons Water
- 1/4 Cup White Sugar
- 1/4 Teaspoon Cinnamon
- 1/4 Teaspoon Chili Powder
- 1/8 Teaspoon Curry Powder
- 1 Cup Walnuts
- 1 Tablespoon + 2 Teaspoons Fresh Lemon Juice
- 1 Teaspoon Finely Grated Lemon Zest
- 1 Tablespoon Honey
- 1/2 Teaspoon Chopped Thyme (optional)
- 1/4 Cup Extra-Virgin Olive Oil
- Kosher Salt + Freshly Ground Pepper
Now let's make the Candied Walnuts!
In a small saucepan combine all ingredients EXCEPT for walnuts, stir to moisten the sugar. Cook on medium-low heat, gently stir and occasionally swirl the pan around until the sugar is all dissolved. Cover; bring to boil over medium heat for 1 minute. Uncover pan, continue to boil over medium heat and gently swirl the pan for about 2-3 minutes, until the syrup turns to a deep amber color. Immediately remove from heat and carefully stir in walnuts until evenly coated. Spread onto foil or parchment paper to cool. Break into pieces once cooled.
Time For The Dressing!
Combine all ingredients, whisk together and top your salad! Leftovers can be stored in an air-tight container in the fridge.
Now for the pièce de résistance!
Fill your bowl with your baby spinach, top with strawberries and candied walnuts! Drizzle your homemade Honey-Lemon Dressing on top! I like to add an additional squeeze of fresh lemon juice. You can additionally add some sliced cucumbers, crumbled goat cheese or a fresh grate of parmesan cheese for some more flavor. ENJOY
